Designed to control the whole programmed leavening process (retarding) through humidity control, the machine is perfect for all leavening bakery and bread products. It is provided with a touchscreen graphic interface to ease its setting. In addition to the standard retarding process (6+1 phases) it operates three manual processes: cooling mode, heating mode and conditioning mode. It is available with 1 to 30 trays of all kinds.
