Gamma chilling provers
Designed to control the whole programmed leavening process (retarding) through humidity control, Gamma is perfect for all small or medium leavening bakery and bread products. It has an LCD graphic interface to ease its setting. In addition to the standard retarding process (6+1 phases). Gamma also operates three manual processes: cooling mode, heating mode and conditioning mode. It also operates with 2 pocket trays (15 shelves).
