PREMIXER

In production of sponge cake, the raw materials are dosed, as for relevant recipe, into the Premixer. The obtained batter is pumped to a Buffer tank and then, through a Turbomixer, after injection of air or nitrogen on this, is deposited onto the baking band.
The Premixer, of different sizes depending on the requested output, consists of a stainless steel AISI 304, tank with vertical mixing blades, cladding and safety protection in stainless steel as well.It is provided with an automatic batter discharge system by means of a pneumatic valve and a stainless steel single-screw pump, at variable speed by inverter. This unit is placed on a mobile frame under the tank for easy cleaning and maintenance.
At the end of production the Premixer, and the Turboemulsifier and the Batter depositor, are cleaned and sanificated by means of a proper CIP (Clean in place) system consisting of a series of three tanks completed by piping and regulation fittings to carry out a programmed set of washing cycles.
The Premixer is used also for preparation of filling cream and in this option the shaft with the mixing blades is horizontal and the machine is jacketed to keep the cream heated.
